Caso di Elva (Toma di Elva) is a semi-fat, raw and pressed cheese. It is cylindrical in shape (20-25 cm in diameter) and the mature cheeses are crowned. The weight varies from 2 to 3 kg. The rind, in the fresh product, is thin, light yellow to reddish-brown in colour, becoming stiffer as it matures. The paste is straw-yellow in colour, and its main characteristic is its crumbliness. The scents are intense and persistent in fresh cheese and become pronounced in seasoned cheese. The seasoning can last several months.
