Description

Spress is defined as a raw cow’s and goat’s milk cheese with semi-cooked and pressed paste. It has the classic cylindrical shape with a straight heel and flat sides. Weight varies greatly from 5 to 8 kg. The rind varies in colour depending on where the cheese is matured. Straw-yellow, compact paste, with diffuse eye formation. Aromatic, sweet flavour in short-ripened cheeses, more intense in more aged cheeses, with hints of flavour. In dialectal jargon, Spress means cheese, and for some it also indicates "young" cheese that has just been produced or eaten unripened.
