Motta is a raw cow’s milk cheese, exclusively acid coagulated without the addition of rennet, with a short or very short maturation period. The shape is round, similar to a small ball (the term ‘motta’ indicates precisely the shape of the product). It is normally an irregular spherical shape with a diameter of 7-8 cm and a weight of around 300-600 g. The eyes are absent, but the cheese has a small diameter. There are no eyes, the paste is white, soft, with punctual colouring due to the spices used. The rind is irregular, ranging in colour from light yellow to hazelnut.
