Cazzomarro, the lamb roulade.

The Cazzomarro is a poor dish of the Matera tradition, based on the fifth quarter of sheep: lamb entrails. The cazzomarro is a big roll, made with the reticella, inside which there are the offal seasoned with garlic, parsley and pecorino cheese. In short, a sort of gnummaredd’ XL version, cooked on the spit or in the oven.
