Bra’ cheese, a semi-fat cheese made from cow’s milk, which may be supplemented with sheep’s and/or goat’s milk, is historically present in the province of Cuneo and takes its name from the municipality of
Bra, where the cheese, originally produced in the mountain pastures, was traditionally matured and sold.
Bra cheese was made by shepherds known as "malgari", who would take their herds down to the plains in the autumn to spend the winter and then return to the mountain pastures in the spring, during which time they would stay on the plains and spread the word about the product and production methods.
The characteristics of the fodder, obtained mainly in the production area and significantly influenced by the climatic conditions of the area, are fundamental.
