Coppi di Langa are dry biscuits produced by hand with some typical ingredients of the Piedmontese tradition: Piedmont Hazelnuts and wildflower honey from beekeeping in Alto Monferrato. They have the shape of "coppi", historically used as a roofing system for the farmhouses of the Langhe and Monferrato.
The ingredients are butter, sugar, egg whites, hazelnut flour, honey, wheat flour, raising powder and salt. The quantities are jealously guarded by a pastry shop in Canelli in the province of Asti. They are produced all year round.
Production dates back to 1970, when a confectioner from Canelli began to develop and experiment with a dry biscuit recipe using traditional Piedmontese ingredients.
Initially, the product was marketed as a tartelletta and was offered together with other biscuits; only later did the biscuit take on the characteristic "coppo" shape that it still retains today.
