Pripravljen v Polesinu, ima kot osnovno jeguljo, cipal in brancin, narezan na rezine, zlato v ocvrti čebuli in kuhan z belim vinom in vodo. V tako dobljeni juhi kuhamo riž, ki ga zmešamo s surovim maslom in sirom. Postrežejo ga z bodečo bradico in brancinom, jegulja pa ostane cela.
